Executive Chef

General harvest Restaurants (Vendemmia | East Anchor Seafood| Raccolto | Autumn | G.H Pasta & Pizza | Haerfest | Eldr.) is looking for a chef who will focus on handmade pasta, vegetables & Seafood. We are a fine dining restaurant that only offers dinner service (5pm-10pm daily) and have a large focus on technique, methodology and details. We also own a seafood company and will feature a large variety of wild/sustainable seafood, bread made in house and local vegetables. Please have experience in fine dining, a desire to learn and hold high standards.

Salary:

$80,000 base pay + $5,000 signing bonus for 1yr commitment (relocation allowance available)

Monthly obtainable bonus potential: $500- $1,000 per month = $6,000 - $12,000 annual

Total annual first year salary potential = $85,000 - $97,000

Details:

- Hire & Terminate (with approval and guidance from upper G.H leadership) of back of house team

- Create high morale and culture of the restaurant

- Standard expectations:

- ———17.5% BOH labor

- ———24% Food cost

- ——— Ensure month over month growth

- Ensure all food orders are placed on time and correctly

- Train and coach BOH restaurant team

- Respond to positive/negative guest feedback

- Run the kitchen during 5 dinner services per week

- The expectation is that the chef works in the kitchen for dinner service 5 days per week.

- Maintain a high and positive presence during business hours

- Keep a clean and organized kitchen

- Uphold the employee handbook

- Write and post the kitchen (with in/out times) schedule at least 2 weeks in advance

- Coach and grow the BOH team

- Weekly manager meetings

- Make sure family meal is put up every night

- Track food cost with Microsoft excel (Available on the restaurant computer)

- Review all food invoices prior to submitting to office

- Be an ambassador for the entire General Harvest brand

**Monthly bonus based on profit percentage**

------Restaurant profits:

- 8% manager receives $500

- 10% manager receives $750

- 18% manager receives $1000

- First year base with existing bonus and 8% profit bonus: $91,000

- First year base with existing bonus and 10% profit bonus: $94,000

- First year base with existing bonus and 18% profit bonus: $97,000

****Details: If there is a negative profit month, the managers will not qualify for bonus the following month. This will continue until the restaurant shows a profitable month: In this case, the bonus potential will resume the next month following a profitable month

**** Details: If there is unapproved overtime this will disqualify the department manager from being eligible for their secondary bonus potential. Approved overtime will need to be submitted to executive leadership and have written exemption 24 hours prior to requested overtime.

Annual Base Pay Increase:

- Restaurant performs 0-4% profit for the year: $0 - $2,000 potential

- Restaurant performs 4.1%- 8% profit for the year: $2,000 - $3,000 potential

- Restaurant performs 8.1% - 12% profit for the year: $3,000 - $4,000 potential

- Restaurant performs 12.1% - 16% profit for the year: $4000 - $5,000 potential

- Restaurant performs 16.1% - 20%+ profit for the year: $5,000+ potential

- Health Insurance package available after 90 days

- 1 work week paid vacation first year (available after 3 months). Then 2 work weeks paid after year 2

- 50% discount for you and a guest at all GH Restaurants (excluding G.H Pasta Co, East Anchor Seafood and special menus)

- Detailed bonus potential (up to $1,000 per month)
